How to use: Combine atta with water (and a pinch of salt if desired) and knead into a smooth, soft dough. Rest for 15–20 minutes, then roll into thin rounds and cook on a hot tawa (griddle) for 30–60 seconds each side until lightly golden. Finish directly over a flame for a puffed, charred roti.
