How to cook: Rinse well 2–3 times until the water runs clear. Cook using the absorption method — combine 1 cup rice with 2 cups water, bring to the boil, cover, and simmer on low heat for 12–15 minutes until all the water is absorbed. Alternatively, pressure cook for 2–3 whistles. Serve hot with sambar, rasam, or your favourite South Indian curry.
