How to Use

Soak in water for 4–8 hours or overnight until the pearls swell and become soft. Drain well before cooking. Use to make Sabudana Khichdi — tossed with peanuts, cumin, green chilli, and potatoes for a classic fasting dish. Also wonderful in Sabudana Kheer (sago pudding with milk and sugar), Sabudana Vada (crispy fried patties), or as a thickener in soups and desserts.
